4 Low Budget And Healthy Recipes

You can save money by buying products in season and paying attention to sales at the supermarket. Cook fresh, pure food and use leftovers for other dishes or save them for later.
The following recipes will show you how to prepare a delicious and healthy meal for less than 4 dollars per person.
1) Tuna Corn Salad
Ingredients:
- 75 g of lettuce
- 4 radishes
- 1 onion
- 150 of canned tuna
- 140g of corn
- 1 coffee spoon of oil
- 2 coffee spoons of mustard
- 1 coffee spoon of honey
- 5 tablespoons of vegetable broth
- Pepper and salt to taste.
Instructions:
Wash the lettuce, shake dry, and place it in a deep bowl. Slice the radishes and chop the onions. Drain the tuna and cut into appropriate sizes. Drain the corn. Place all ingredients on a bed of lettuce.
Mix vinegar with oil, mustard, honey, vegetable stock, salt, and pepper for the dressing and pour over salad.
2) Spinach Quiche With Tomatoes
Ingredients:
- 210 g of flour
- 100 g of low-fat margarine
- 60 ml of water
- ½ coffee spoon of salt
- 400g of frozen spinach
- 1 whole onion
- 1 pressed garlic clove
- 1 coffee spoon of olive oil
- Pepper and nutmeg to taste
- 125 ml of cream
- 2 eggs
- 200 g cherry tomatoes
- 100g of fresh goat cheese
Instructions:
Knead 210 g flour, 100 g low-fat margarine (40% fat), 4 tablespoons cold water, and 1/2 teaspoon salt to make a smooth dough, wrap in foil and refrigerate for about 30 minutes.
Roll out the dough on a work surface dusted with 2 teaspoons of flour and line a springform pan with a narrow edge. Prick a few times with a fork and preheat the oven to 180°C for about 20 minutes.
For the topping, thaw 400 g spinach and squeeze out the water. Finely chop 1 onion and fry it in 1 teaspoon of oil with 1 crushed garlic clove, add it to the spinach and cook for about 5 minutes. Season with salt, pepper, and grated nutmeg.
Arrange the chilled spinach and halved cherry tomatoes (200 g) on top of the pasta. Mix 125 ml of cream (up to 15% fat) with 2 eggs and season with salt and pepper. Pour the egg mixture over it. Crumble the goat cheese (100 g) and sprinkle it on top.
Bake the quiche in a heated oven for about 30 minutes.
3) Gnocchi With Tomato Sauce
Ingredients:
- 100 g potato gnocchi
- 1 whole onion
- 1 garlic clove
- 1 coffee spoon of oil
- 200 g of peeled canned tomatoes and ½ diced fresh tomato
- 1 tablespoon of tomato paste
- 1 coffee spoon of spices of your choice
- 1 tablespoon of grated parmesan
- 1 tablespoon of finely chopped and fresh basil
- Pepper and salt to taste
Instructions:
Cook the gnocchi according to the package directions. Chop the onion and mince the garlic. Heat the oil in a frying pan and fry the onions and garlic. Deglaze with diced tomatoes.
Season the sauce with tomato paste, herbs, pepper, and salt and simmer for about 5 minutes. Spread the gnocchi on top of the tomato sauce and garnish with parmesan cheese and basil.
4) Meatloaf With Feta
Ingredients:
- 160 g of uncooked brown rice
- 1 whole onion
- 4 pieces of green pepper
- 2 leek stems
- 2 coffee spoons of oil
- 400 of minced beef
- 200 ml of vegetable broth
- Salt and pepper to taste
- Thyme and marjoram herb
- 120 g of light feta cheese
Instructions:
Cook the rice. Chop the onions. Cut the bell pepper into strips and the green onion into rings. Heat oil in a frying pan. Cook the minced beef with the onions. Add the peppers, leeks, and vegetable stock, season with salt, pepper, thyme, and marjoram, and cook for about 10 minutes.
Cut the feta cheese into cubes and mix with the rice. Serve the meatloaf.
